How do I output slides for service bureaus that have non-NEXTSTEP hardware and software, such as Macintosh?

Unfortunately, there is no easy answer to this. In theory, one should be able to output device-independent PostScript files from Concurrence (through the Print -> Save button option), and any PostScript printer or slide maker should be able to handle it. However, in practice this does not always work. It usually has to do with PostScript Level II support. NEXTSTEP supports it, but the Mac and many output devices do not. People usually have trouble with color calibration, such as incorrect shading or colored letters, or slides getting chopped off. Since we do not have access to Macintosh or PC output devices, we have not had the opportunity to troubleshoot these problems. I can only go by what I've heard from customers attempting to do this. There are PostScript hackers who have worked around the limitations and printed their slides on Mac output devices. But that's the exception to the rule.
